3 Ingredients Portuguese Coconut Cupcakes

This is a very simple and easy recipe that my grandma and my Mum always did. I have always loved these since I was a kid. They are rather typical around the centre of Portugal at around Easter time. They are even more delicious, accompanied by some Port wine and Serra da Estrela cheese.
PREPARATION TIME: 10min | COOKING TIME: 15min | SERVINGS: 48 cupcakes
INGREDIENTS
- 7 eggs
- 400g sugar (I use 180g sugar and 220g erythritol)
- 500g dissected coconut
METHOD
1. Whisk the eggs, whole. Add in the sugar and mix well. Add in the coconut and mix well.
2. Using a tablespoon, fill in the cupcake cases individually. About a tablespoon per case.
3. Bake in a preheated oven at around 180 °C until they are a little brown on the top (the inside will look slightly liquid, and that’s ok).
4. Let them cool down and enjoy!
